empanadas to celebrate her new album.

- So we're gonna start making some empanada dough.
- Mmmm.
- I'm gonna mash this together.
- What are these things?
- This is better and cream cheese.
- I'm gonna hold the bowl so I'm doing a thing.
- That's good, yeah.
- [Nataly] I'm gonna spin it a little bit.
- [Hilah] Shake it up.
That bowl has flour and cornmeal and salt and I like to add a
little cornmeal in for some nice texture.
- Ooh.
- I like texture. - That's great.
It's also corn so it's a
vegetable so you feel like you're--
- That's a good point. - eating a little more veggies.
- Okay, so now you can dump that stuff in here.
- [Nataly] Like altogether? - [Hilah] Let's do half.

And I'm just gonna mix-- - I'm helping.
- this up.
So, you can add the rest now.
- [Nataly] That is looking great.
You know before it just looked like butter and cream cheese and
now it's starting to look like dough.
- Yeah. - So, good work.
Take off my jewels.
It's easier just to get, oh God. - Sorry, just wanna.
(Hilah chuckles)
It's almost the same size.
Now we're married.
- Okay, so you weren't really watching but you can watch
the replay on camera. - Sorry about that.
I was just combining rings.
Look, all of our rings are there now.
Just in case you need my hands at any point.
I just wanted to... - Be ready.
Do you want to touch this dough?
It's kind of nice. - [Nataly] Yeah.
Should I wash, I didn't (groans).
- [Hilah] See, it's like soft.
- [Nataly] Oh, that feels really nice.
- [Hilah] Cool. - [Nataly] I like this.
- [Hilah] And solid but if we tried to roll it out now it'd be
really sticky so I'm gonna put in the fridge for a little while
we make the filling. - Oh, great.
- Okay so our dough is chilled and we just made our
black bean empanada filling.
If you want to see how to make this I'll put the video on
Nataly's channel and I'll link to that in a little card and
down below but you can use like taco filling and I've got a
million taco filling recipes on the channel already.
You can use shredded chicken.
You could just use cheese and
vegetables you can use whatever you want.
- You could put a sock in it.
Doesn't matter.

- So I'm gonna rolling this out.
- [Nataly] And how thick do you want it to be?
- [Hilah] About a quarter of an inch.
- [Nataly] Great.
- I turned the fridge off so
it's not as cold as it should be.
- Oh. - I just realized that.
- And then you're flipping it.
- I want to add a little more flour.
- [Nataly] And then you're rolling it.
- [Hilah] So it doesn't stick. - [Nataly] Oh.
- Then I'm gonna flip it back over.
Oh Lordy.
- You got it. You got this.

- Hot Pockets. - Hot Pockets.

- Yeah, that's been taken I guess.

- Okay.
- This is beautiful.
- I've got this big cutter.
If you don't have on like this you can use a smaller one and
make little empanadas.
- How many empanadas does this make?
- Well, if the dough was colder and I was able to roll it out
thinner you'd probably get like six.
- Oh wow.
- But it's not rolling out that thin because we (censored) up.
- [Nataly] Good. It's good to be honest.
- [Hilah] Yeah.
So make sure you don't turn your fridge off before your
refrigerate your dough. - Right.
- And I like to transfer the dough circles first and then
fill 'em just 'cause it seems like it gets a little tricky to
fill, to move them once they're filled.
- [Nataly] Smart.
- You want to grab a couple pieces of cheese.
- Mmmm.
- We're using a Mexican Oaxacan cheese here.
You can use any kind of cheese or you can leave the cheese out
but I don't know why you'd want to do that.
- Ooh.
- Then, you just sort of fold it over.
Sometimes you might need to sort of manipulate it.
- [Nataly] Oh my gosh, that's beautiful.
- [Hilah] I should have let you do this one because I think it's
gonna be easier than this one
but do you want to try to do that one?
- [Nataly] Mhmmm. - Don't mess up.

- Now I normally don't like to make videos that are this
unprofessional with dough that's too warm to roll out properly
but I think that-- - With people like this.
- I think that you can just learn something from our mistake
and make sure you refrigerate your dough really well.
These are easy.
Anyone can do it.
- Anyone, even a musician.
- Notoriously flaky. - That's what empanadas have
in common with musicians.
I'm going to apply this cheese carefully.
- [Hilah] Here we go.
I'm gonna scooch this one.
Okay.
- [Nataly] You're really good at that.
- Well this one, this one definitely is not gonna
be our pride and joy. (Nataly laughs)
We're gonna do a little egg wash
on top because it'll make a nice and shiny.
- Oh, that's a great idea.
- And it will cover up all our mistakes.
- That's a great idea.
She's so smart.
- Okay, now I'm also gonna use the fork to sort of.
- [Nataly] (gasps). - [Hilah] Go around the edges.
- [Nataly] Oh my goodness, you're making them pretty.
- [Hilah] Yeah, well, I'm trying.
It's the same thing I do with my face everyday.
Try to make it pretty.
With a fork and some raw eggs.
- Might want to try a different tools.
That might be--
- Have you been to the beauty bar?
- [Nataly] I really want one of those things because
my brushes get all gross.
And look at that.
- Oh, like a silicone one? - Yeah.
- Do you have the natural fiber ones?
- Yeah.
- Yeah, I think that was fine in the pioneer days but like guys
we have plastics now.
So then just to make sure they don't burst open any more,
I'm gonna do a little hole in the top.
That one probably doesn't need
it 'cause it's got holes all in it but...
- Sorry guy.
It's okay, we love you anyways. - You're still gonna be tasty.
- The ugly empanada. - That's a good kids book.
- It is.
- So then we'll put these in the
oven at 375 for probably 15, 20 minutes.

- Okay, while they cool, I'm gonna make a dip.
- Okay.
- With mayonnaise because I know
that mayonnaise is your favorite food.
- I love mayonnaise. - I love mayonnaise.
- My second favorite food group.
- [Hilah] So I've got a little minced garlic in there already.
- [Nataly] Ooh, sneaky.
- [Hilah] And I'm gonna do a little bit more orange zest.
- [Nataly] Orange zest. - [Hilah] Mhmmm.
- [Nataly] That looks great.
- Then we're gonna add some orange juice.
- [Nataly] This is beautiful, by the way.
- [Hilah] Thank you.
Oh, don't get the seeds in there.
- [Nataly] No bueno.
- [Hilah] But I do find that oranges with seeds taste better.

- So not eating the seeds but the fact that they contain the
seeds makes them taste better.
- [Hilah] Yeah. - [Nataly] Got it.
- [Hilah] Sweeter. I mean doesn't it smell good?
It smells like super fresh.
- It looks perfect and smells perfect and
everything is perfect.
- [Hilah] And a little bit of lime juice, too.
- [Nataly] Oh my gosh.
- [Hilah] Weee!
Isn't that, don't they say that the smell of oranges is supposed
to make you in a good mood or something?
- It's working.
- Feeling happy? - I feel great.
